A lot of summer cocktails are pretty sweet – and for good reason! They celebrate the fruits of the season and remind us to have a little bit of vacation spirit with us all the time. But sometimes that can turn cloyingly sticky sweet pretty quickly. That’s why I love beer-based cocktails. I know that sounds so strange, but if you’ve tried the Raspberry Beer Cocktail or a Three Amigos or a Moon-a-Rita, you know it can be pretty tasty!

I’m sure you have heard of a shandy before…most varieties are lemonade mixed with beer. And while those are very, very tasty, this version replaces the lemonade with ginger beer for even more bubbly refreshment and a bit more of a bite! Enjoy!

Ginger Shandies
Serves 6

Ingredients
3 bottles (11.2-ounce) chilled Hoegaarden beer

1 bottle (12-ounce) chilled ginger beer

1  thinly sliced lemon

Mint sprigs, for garnish

Directions
In a large pitcher, combine Hoegaarden with ginger beer. Stir in most lemon slices and mint sprigs. Fill 6 rocks glasses with ice. Add remaining lemon slices to glasses and pour in shandy. Garnish each drink with a mint sprig and serve.
