After a long day outside, is there anything better than watermelon? It’s sweet and so refreshing. I swear, sometimes I buy a quarter of a melon and eat the whole thing at once. That’s ok right? I mean, it’s mostly water…Anyway, this agua fresca-like beverage is an ideal antidote to a hot day. It’s simply a strained puree of sweet juicy watermelon and crisp cool cucumber – how can you go wrong?
Feel free to play around with the ratio of watermelon to cucumber to suit your taste preference. Regardless, I hope you find this cooler as delicious and refreshing as I do!

Watermelon & Cucumber Cooler
Ingredients (2 small servings)
2 cups cubed seeded watermelon
3/4 cup chopped peeled English cucumber
Directions
Combine watermelon and cucumber in a blender; blend until very smooth.
Place a fine mesh strainer over a large bowl or pitcher; pour mixture through sieve and collect the liquid. Discard any solids left in the sieve.
Serve ice-cold.
