Lazy Girl Recipe: Citrus Chicken Salad

Salads are a summertime staple in my house. I like that they’re cold and take no time at all to throw together. The only problem is that sometimes, they become same-old, same-old. But they don’t have to! This citrus-y version is delicious and not like any other salad I’ve had. The orangey Asian-inspired dressing goes so well with slightly spicy grilled chicken and a sweet hit of kiwi. You can even sub other fruits in – one time the store didn’t have kiwis so I picked up a mango and it was equally as delicious! Enjoy!
Ingredients (Serves 1)
2 cups arugula
1/2 cup cooked farro (we have subbed in anything from quinoa to whole wheat orzo)
1/2 cup chopped and seeded cucumber
1/2 kiwi, chopped
1/4 yellow bell pepper, diced
2 tbsp orange juice
1 tsp olive oil
1/4 tsp chopped garlic
1/4 tsp soy sauce
1 chicken breast (season however you’d like, I prefer something with a little kick!)
2 tsp chopped cashews
Directions
Heat grill. In a bowl, top arugula with the cooked farro, chopped cucumber, chopped kiwi, and diced yellow bell pepper. In another bowl, make the dressing. Whisk together orange juice, olive oil, garlic, and soy sauce; toss with salad. Grill the seasoned chicken. Place chicken atop salad and sprinkle with chopped cashews. Done!
