When it starts to get warm out, I start putting away the crock pot and roasting pans I loved in the winter. I just don’t want to really “cook” anything! I start craving cold, crisp green salads and well, really any “salad” that has a bunch of mayonnaise in it. Tuna Salad. Egg salad. All good. But my favorite is chicken salad. Roasted chicken, sweet grapes, pecans, crunchy celery…I love it all.
The best part is, now you don’t even have to cook the chicken yourself. Most grocery stores now sell fresh rotisserie chicken you can just pick up for about $5 and shred in about 5 minutes—the best time saver. This chicken salad is great in a sandwich of course, but I love a big scoop of it served alongside pita chips. And some extra grapes too! Here is my favorite recipe for this spring and summertime staple!
Ingredients
1 rotisserie chicken, pulled or chopped
Kosher salt and freshly ground black pepper
1/2 cup good mayonnaise
1 to 1 ½ tablespoon dried tarragon (to taste)
1 cup small-diced celery (2 stalks)
1 cup red grapes (love the pop of color), cut in ½
1/3 cup pecan pieces
Directions
Pull or cut the chicken into a 3/4-inch dice. Place the chicken in a bowl; add the mayonnaise, tarragon, celery, grapes, pecans, 1 1/2 to 2 teaspoons salt, and 1 teaspoon pepper and toss well.
*To make this a little healthier, substitute the mayonnaise with fat-free Greek yogurt. You'll cut fat and calories and add a ton of protein!
