Lazy Girl Recipe: Watermelon Feta Salad

When the heat really rises in the summer, there is nothing I hate more than cooking. If it requires the oven or the stove, forget about it. Sorry Husband, we’re not having it. So we get by with a lot of grilling and a lot of fun and creative salads. But salad doesn’t just have to mean lettuce. Oh no. You can make grain salads. You can make other veggie salads (like tomatoes and mozzarella!). And here’s a secret: Fruit salads make a great summer dinner!
I know, fruit for dinner. It’s hard to wrap your mind around it, but I promise you will love it! And why not start with the best fruit of the season: Watermelon! I can’t get enough of the stuff lately. I’ve been snacking on it non stop. But the way I love it best is in this salad. It’s delicious, fresh, and slightly salty due to the yummy feta!
The best part is this literally comes together in 15 minutes, so while your chicken or salmon or burgers are cooking on the grill, you can whip up this salad at the same time.
Watermelon Feta Salad
6 cups cubed watermelon
1 cup crumbled feta cheese
¼ cup thinly sliced red onion
¼ cup chopped fresh mint
¼ cup fresh lime juice
1 tbsp extra-virgin olive oil
Combine watermelon, feta cheese, red onion, and mint in a large bowl. Pour the lime juice and olive oil over the watermelon mixture and toss gently to coat. Serve immediately.
*You can also mix in some cherry tomatoes to cut down on the sweetness. I love this version here! Cucumber would be a great mix-in too – super refreshing with the mint.
